    Go at opening, before the market crowd wakes up — by noon in December the queue is out onto Via Museo. Book the timed slot online; the 5,300-year-old man himself takes ten minutes, the clothing and tools are the part worth the hour.

    The year-round produce market two streets from Walther Square, where locals buy speck and mountain cheese at a third of the stall price. Buy the speck here to take home, not from the Christmas huts.

    A house-brewed beer and a plate of canederli, which is what a South Tyrolean lunch actually looks like — the market huts sell snacks, not meals, and eating properly at midday is what stops you spending forty euros on sausages by six. It fills at 12:30 in December; book or arrive at noon.

    Renon cable car to Soprabolzano and the narrow-gauge trainBolzano

    Twelve minutes from the middle of the city to a sunlit plateau at 1,200 m, then a hundred-year-old narrow-gauge train along the top to Collalbo. This is the escape valve of the day: Bolzano sits in a bowl and is grey and cold in December, while the Renon is usually above the inversion in full sun with the Dolomites laid out in front of it.

    Entry is free and the market runs from the end of November to 6 January, 11:00–19:00 on weekdays and from 10:00 at weekends. The half hour after dusk is the whole point — get down for it rather than arriving at eleven in the morning when it is a car park with huts on it.

    Two things to eat here and neither is a bratwurst: Strauben, the fried spiral funnel cake with lingonberry jam, and the mulled wine, which in Alto Adige is made with real local red rather than syrup. There is a deposit on the mug — keep it as the souvenir or hand it back for the coins.

    The market spills well beyond Walther Square and the stalls along the river are quieter and cheaper. Zelten — the dense rye Christmas loaf full of figs, walnuts and pine nuts — travels for weeks and is the one edible worth suitcase space.
