This is the trick that makes the rest of the day work. Nothing in Adamas opens before 09:00, so rent from about 18:00 the evening before on a 24-hour rate and keep the keys overnight — otherwise Sarakiniko at dawn is impossible without a taxi you cannot book.

Five kilometres from Adamas and empty at 06:20; by 11:00 there are several hundred people on white rock with no shade anywhere on it and the light is flat and blinding. Walk left past the inlet to the shipwreck side — almost nobody does, and that is where the rock is strangest.

Call the operator at 08:00 on the day — if the north wind is up they reverse and run the east coast instead, and that is a different, lesser day. Lunch aboard is included on the full-day boats.

Kleftiko is a pirate anchorage of white arches you swim through, not a beach — there is nowhere to stand, so it is mask-and-fins or nothing. Ask to stop at Sykia on the way back: the cave roof collapsed and it is lit from above like a skylight, and half the boats skip it to keep to schedule.

Ten minutes of steps from the top car park and you are on the highest point of the island looking down the whole gulf. Go up first and drink afterwards — the terraces below fill from 19:00 and you will spend the sunset waiting for a table instead of watching it.

Book the late seating and ask for the lower terrace, which sits directly over the syrmata — the painted boat-house doors cut into the rock. Ten minutes on the quad from Plaka on an unlit road, so take the coast route out and back rather than the shortcut.
