The day, as they ran it
  1. 8:15 am1
Cours Saleya at eight, and socca standing upNice

Flowers and produce Tuesday to Sunday mornings, packed away by about 13:00; on Mondays it is the brocante instead and there is no food market at all. Socca has to be eaten within a minute of coming off the copper pan — Chez Thérésa sells it from the shop on rue Droite and the queue moves faster than it looks. Eat it standing, with pepper, off the paper. Verified 2026-09-06: flowers and produce Tuesday to Sunday from about 06:00 to 13:30, and on Mondays the square is given over to the brocante (roughly 07:00–18:00) with no food market at all — exactly as written.

  2. 9:30 am2
Up the Colline du Château for the bayNice

Free, open from 08:30, and there is a lift at the east end of the Promenade if the 200 steps do not appeal. Go before eleven: later the sun swings behind the view and the whole curve of the Baie des Anges sits in haze until evening.

Car and driver, and the middle road eastÈze

Three roads run east out of Nice: the Basse is traffic lights and seafront towns, the Grande is the highest and emptiest, the Moyenne is the one that delivers you to the gate of Èze. A car and driver for the day on this coast runs €550–700 and removes the parking problem in Èze, the Monaco dress code and the wine pairing question all at once. Confirm the finish time when you book — some quote a hard eight hours and dinner is at 19:30.

  4. 12:20 pm4
Èze village and the garden on the summitÈze

The village is one spiral of stone lanes and it is genuinely lovely in the hour before the coaches; the cactus garden crowning it sits 429 m straight above the sea for the price of a coffee. The Chemin de Nietzsche drops from the village to Èze-sur-Mer in about 1h20 down and 1h30 back up — real shoes, and not in the middle of a day that ends in a jacket. Verified 2026-09-06: in January, February, March, November and December the Jardin Exotique is open 09:00–16:30, and the winter admission is about €4 rather than the summer rate, so the midday visit works on a February date. Cost corrected to the winter price.

  5. 1:55 pm5
Lunch on the terrace cut into the rampartÈze

The terrace hangs off the village wall with nothing between you and the water. Book the terrace specifically when you reserve — the indoor room is a different and much lesser experience for the same money. Keep it to two courses: dinner tonight is four hours long.

  6. 4 pm6
La Turbie and the Trophy of AugustusLa Turbie

Two thousand years old, raised to mark Augustus subduing the Alpine tribes, standing 480 m directly above Monaco with almost nobody at it. Closed Mondays. Ten minutes off the Grande Corniche on the way down, and it is the best place on this coast to see how absurdly small the principality is. Verified 2026-09-06: closed Mondays, and in low season (2 January to 18 May) the hours are 10:00–13:30 and 14:30–17:00 — it shuts for lunch and closes at 17:00, so this stop has been pulled back to end at 16:45 rather than at the gate-closing minute. Also closed 1 January, 1 May, 1 and 11 November and 25 December.

Le Louis XV, and the reason this day costs what it costsMonaco

NOT POSSIBLE ON A FEBRUARY DATE — corrected 2026-09-06, and this is the stop the whole day is priced around. Two things in the original were wrong. The closing days are Sunday and Monday, not Tuesday and Wednesday: dinner runs Tuesday to Saturday from about 19:30, with lunch on Friday and Saturday only. And the restaurant takes a long annual winter break — in the 2025–26 season it went dark in mid-November and announced its reopening for late March 2026, with reopenings in other years falling in the first week of March. A February evening here is a locked door. Either move this day to the April–October half of the year, or keep the Corniche route and eat somewhere else in Monaco or back in Nice. When it is open, the rest holds: three stars since 1990, tables six to eight weeks ahead, a tasting menu around €390 and a pairing another €250 or so, and a jacket for men that they do mean. Ask for a table on the square side; the room is the point as much as the food.

Home the low way, with the coast litNice

Twenty-five minutes at that hour, and the reason to take the sea road back rather than the motorway is Cap-d'Ail and Villefranche reflected on the water. Included in the driver's day if you asked for it at the start, and an extra hour if you did not.
