Wear something you do not mind smelling of whey, and be early, because they cannot wait for you.

    Twenty minutes up into the hills, where the draught off the Apennines does the drying. Ask why the windows are all on one side of the building; the entire method is that one current of air. The 24-month against the 30-month, cut on the blade, is the tasting that matters, and the unsalted Tuscan-style bread it arrives with is not an accident.

    The Baptistery of ParmaParma

    Pink Verona marble outside, and inside a painted dome most people do not look up at for long enough. Antelami carved the portals and the cycle of the months around the interior. One ticket covers the baptistery and the diocesan museum; Correggio's dome in the Duomo next door is free and takes ten minutes. Verified 2026-09-06: baptistery and diocesan museum open daily 10:00–18:00 on one combined ticket valid two days, sold at the museum on the far side of the piazza rather than at the baptistery door.

    Anolini in brodo at Trattoria Ai Due PlataniParma

    Five kilometres out of Parma toward Coloreto and full of Parmigiani at 13:00, which is the test. Anolini in brodo — small, one filling, and the reason to drive out here — then torta fritta with the culatello. Book. Verified 2026-09-06: closed all day Wednesday and on Tuesday evenings, so this day cannot be run on a Wednesday.

    The family has been doing this since 1605, and the barrels in the loft are not 'aged twelve years' — they are a battery topped up for generations, so the number on the bottle is a minimum rather than an age. Take the tasting that includes the Riserva. The supermarket balsamic you have had is caramel and wine vinegar, and you will taste the gap in about a second. Booking required; there is no shop to wander into.

    Same family, different address: four tables behind a 1605 shopfront, the oldest deli in Italy that has never moved. Cotechino and a plate of gnocco fritto. Buy the vinegar here rather than at the acetaia — same bottles, and you are not carrying them round all afternoon.

    Bottura's other room and the honest answer to Osteria Francescana's booking lottery: the tasting costs a fraction, opens about a week ahead instead of months, and comes out of the same school of kitchen. Sit at the counter. If you did want Francescana itself, its online release is quarterly and gone in minutes — that is a trip planned around a booking, not a booking fitted into a trip. Verified 2026-09-06: open Monday to Saturday and closed Sundays; dinner runs 20:00–24:00 with the last seating at 21:30, so a 20:00 table is the right end of it.
