    Pickup from the cave hotel, in the darkGöreme

    The time on your voucher is a guess. The operator calls the flight at about four in the morning once the civil aviation authority has released the fleet, and the minibus is either at your door forty minutes later or not at all — so sleep with the phone loud and the clothes laid out. Dress for ten degrees colder than the forecast: the launch field at five in December is genuinely freezing and the burner only warms your head. Verified 2026-09-06: the go/no-go is made before dawn by SHGM, Turkey's civil aviation authority, on wind, visibility, precipitation and turbulence over the Göreme flight zone; ground wind above about 25 km/h grounds the fleet, and when SHGM says no, no operator flies and no amount of paying more changes it.

    The flight over Göreme and the fairy chimneysGöreme

    Held, not booked, and that is the honest status. The number the booking sites do not print: SHGM, the Turkish civil aviation authority, grounds the entire Cappadocia fleet on roughly a third of all mornings taken across the year — and that average hides the seasons badly, because January runs near 70% cancelled while June to September flies more than 85% of mornings and August loses under one in ten. Rebooking means the next morning if a basket has space, so budget two mornings here and take the first one — people who allow a single morning are the ones who leave without flying. Pay the extra eighty euros or so for a sixteen-passenger 'comfort' basket rather than a twenty-eight-person one; the difference is an edge compartment instead of the middle. The champagne at the landing is included, ceremonial, and frequently sparkling apple juice. Verified 2026-09-06: the cancellation figures above are the corrected ones — this stop previously understated winter (a third, against nearer 70% in January) and overstated summer (one in six, against under one in ten in August). 'Hold' is still the right status, but a September traveller is holding against much better odds than a January one, and it is the winter visit that genuinely needs two spare mornings.

    Second breakfast back in GöremeGöreme

    You have been awake four hours and eaten a biscuit. This is on the museum road, opens early for exactly this trade, and does a proper village breakfast — börek, eggs, honey, clotted kaymak — for the price of a coffee in Istanbul. If the flight was scrubbed, come here anyway and rebook from the table while the operator's phone is still answering.

    Red Valley walked in from Çavuşin, not driven toÇavuşin

    Almost everyone drives to the Red Valley sunset car park, walks two hundred metres and calls it the Red Valley. Start instead from Çavuşin village and walk in: the car park is the last stretch of the same trail and the good part is the two hours before it. The path braids constantly and next to nothing is signposted — the tea stands at the junctions are the landmarks, and the men running them will point. The rock-cut Üzümlü church is up a short scramble off the main line and is not marked at all. Take two litres and a torch for the tunnels; there is no shade and no water on the route.

    Testi kebap and a sit down at SetenGöreme

    Up the hill behind the village on Aydınlı Sokak, so it gets less passing trade than the museum road and cooks better for it. Regional Anatolian rather than the same six kebabs, and the terrace looks back over the chimneys. Phone ahead if you want the pot kebab, which is sealed and baked and cannot be started when you arrive.

    Kaymaklı underground city, after the coachesKaymaklı

    Kaymaklı rather than Derinkuyu if you are tall or at all claustrophobic: the tunnels are wider, the loop is shorter, and the descent is not eight storeys. Whichever you pick, come after two — the guided groups do the underground cities in the morning and a tunnel built for single file with two-way traffic in it is genuinely unpleasant. The route is arrowed, red going down and blue coming up, and following them is not optional if you do not want to meet a queue head-on in a passage you cannot turn round in. No phone signal, and last entry is well before closing, which in winter is earlier than the sign at the ticket office suggests. Verified 2026-09-06: open daily 08:00-19:00 April-October and 08:00-17:00 November-March, with last entry an hour before close. A 14:45 arrival is comfortable in season, but in winter the 16:00 cut-off means 'after the coaches' has to mean two o'clock, not four.

    Uçhisar Castle instead of Göreme's sunset pointUçhisar

    Göreme's Sunset Point is a hundred tripods facing the same way. Uçhisar is the highest rock in Cappadocia and you look down into the valleys instead of across at other people — a few lira to climb, twenty minutes at the top. The last flight of steps is exposed and there is no handrail worth the name, and they clear it at sunset sharp rather than after it, so go up early in the light rather than timing the last minute. Verified 2026-09-06: open about 08:00-20:00 in summer, entry around 400 TL, so a 17:00 climb is well inside the hours in season; in winter it closes with the light and this stop has to move to mid-afternoon.

    Dinner in somebody's cave house at TopdeckGöreme

    Six or seven tables in a family's own carved rooms, one seating a night, and it books out days ahead in every season including January — reserve when you book the balloon, not when you land. Home cooking rather than restaurant cooking: mantı, stuffed vine leaves, the slow lamb. Bring your own wine, they do not have a licence, and the shop on the museum road shuts at eight.
